Nicole was born on September 9, 1985, to Chris Czapiewski and Charlene (Jacobson) Czapiewski in Rochester, Minnesota. She grew up in Spring Valley, Minnesota, attending and graduating from Kingsland High School in 2004. While in high school, she was very active in band and choir. In 2008, Nicole met Andrew Meyerhofer and they were united in marriage on September 4, 2010, at St. Ignatius Catholic Church in Spring Valley. To this union, four boys were born: Brody, Ryan, Landon and Tyson. After obtaining her Associate Degree, she worked for Major and Company in Preston as an accountant until 2012. She then went to work for the Mayo Clinic in Rochester, Minnesota. Nicole worked as a Payroll Associate, Payroll Analyst, and was most recently promoted to Senior Auditor 1. She excelled in her career and was promoted on multiple occasions. Her long-term goal was to work in the Risk Department, and she proactively reached out to learn what it would take to achieve her goals, subsequently earning her Bachelor’s Degree, Master’s Degree and credentials. Nicole was a loving mother who always put her boys first, thinking of ways to make each one feel special in their unique way. She was always looking for ways to make them comfortable. She was well known for her great memory of people, dates and preferences. Nicole was a master at homework, helping the boys with all their homework and understanding all subject matter. She loved the 4-H program, including helping her boys with their 4-H projects, and showing pigs at the fair. Nicole ran the entire household while working full time; she managed all details without exception, including caring for Mr. Codsworth, who she rescued as a stray kitten and nurtured back to health.
Nicole was an avid reader of murder mysteries, and she enjoyed doing puzzles, diamond art and crocheting. Her crocheted blankets won high honors at local county fairs and the state fair. She lovingly crocheted blankets for Andy, the boys and extended family that will be treasured for years to come. Nicole also loved Prince, Halloween, Christmas, Elvis Presley and trips with her mom to Graceland. She was an active member of St. Finbarr Catholic Church, where she served as a Catechist, and was a member of the Pastoral Council. She also served as a Eucharistic Minister, and encouraged Brody, Ryan and Landon to volunteer as Alter Servers.
