I’m sorry to report that I did not get a chance to write an article for this edition of the Journal. I spent the last two months doctoring with my husband in Rochester. I have jotted down some of life’s lessons that have been passed down to me and that I feel are very true. Hope you can apply them to your life as well.
1. Life isn’t always fair, but it is still good.
2. Life is too short to waste time hating anyone.
3. Your job won’t take care of you when you are sick - but your friends and family will. Stay in touch!
4. When it comes to chocolate - don’t even try to resist!
5. Make peace with your past so it doesn’t screw up the present.
6. Don’t compare your life to others - you have no idea what their journey is all about.
7. If a relationship has to be a secret - you shouldn’t be in it.
8. Get rid of anything that isn’t useful, beautiful or joyful.
9. Whatever doesn’t kill you really will make you stronger.
10. Burn those nice candles, use the good sheets, and wear your fancy lingerie! Don’t save it for a special day - today is special!
11. No one is in charge of your happiness but you!
12. For every disaster or problem that creeps into your life, remember these words - “Will this matter in five years?”
13. Forgive everyone for everything.
14. Time heals almost everything, so give time some time.
15. However good or bad the situation is, it will change.
16. God loves you because of who God is, not because of anything you did or did not do.
17. Growing old beats the alternative - dying young.
18. Your children only get one childhood - enjoy it!
19. Life isn’t tied with a bow but it’s still a gift.
20. If we all threw our problems in a pile and saw everyone else’s, we’d probably grab ours back!
21. Frustration is trying to find your glasses without your glasses.
22. Good friends are like stars, you don’t always see them but you always know they are there.
Recipe for cooler corn: the following simple trick cooks a couple of dozen cobs at one time by using your beverage cooler!
Wash out your insulated cooler. Shuck several ears of corn and place in the clean cooler. Pour an ice cream pail of boiling water over the corn and close the insulated lid. Let sit for about 30 minutes. Drain the cooler and keep the lid closed. The corn will stay warm with a just-right texture for about two hours. Great for camping or an outside picnic!
Betty Wiltgen’s
simple refrigerator pickles.
Got this recipe from her about 26 years ago when she was still working at the bank. I make these many times during the summer.
Peel several cucumbers and slice. Put into a large bowl. Add as many sliced onions as you want. Soak this in a mixture of salt and a little water. After about an hour, drain.
Boil together 1 cup sugar and 2/3 cup white vinegar. Pour over the cucumber/onions and chill. The syrup will cover lots of cucumbers as they tend to shrivel up a little bit.
Can eat as soon as they are cooled! Sometimes I do not peel the
cucumbers as I like the eating all the cucumber.
