I’m back, and I’m hungry

By now, you’ve probably heard of the new restaurant in Rushford named Lynndyn Bridge. After we ran an article on our March 16, 2012, front page about this fine new restaurant, I had to make it a priority to make this my first Real Bites stop of 2012.

Right when I walked in the door, I was greeted and seated with a welcoming smile. Both Lynn Halverson and Bridgette Kampa, owners of Lynndyn Bridge (do you see where they get the name?), work directly with the customers, from hosting to waiting tables.

To me, that’s what makes small towns so charming. The owners are involved in their business, connecting with the customers every day.

As I sat at the table, I looked around and there was a pretty good crowd that day. As a matter of fact, a group of retired Minnesota State Troopers were gathered at a table near the back of the restaurant. And, I didn’t even see donuts on the menu? That’s a joke to my officer friends!

I scanned the menu and Raspberry Chicken Dinner caught my eye.

Being the carnivorous gent that I am, I couldn’t resist another variation of meat.

When my food came, I could smell the delicious raspberry sauce smothering the skinless, boneless, tender chicken breast atop a pile of wild rice. It lived up to its smell, as I consumed the entire plate of food.

Let me just say, I was a member of “The Clean Plate Club.” And, you know what the means? Dessert! I wish I had enough space with this week’s Real Bites to include a picture of the dessert, as well. It was phenomenal!

It’s a very good thing to see new restaurants popping up in each of our communities in Fillmore County. It seems to me that with each one being so distinct in what they have to offer, they add a little variety to our daily lives -- options!

Whether taking the family out to eat, or making plans for dinner-for-two for a wedding anniversary, I really think Lynndyn Bridge has created a niche that gives people in the Rushford area (and beyond) another option.
