Corn Bake

Saute 1 small onion, 1 green pepper, 1/4 cup margarine and 1/2 tsp. salt. combine with 1 can creamed corn, 1 can whole-kernel corn (juice too), 1 small box Jiffy corn muffin mix (8 1/2 oz. size) and 3 well-beaten eggs. Mix and put into a large, greased casserole. Top with 1 cup sour cream or 1 cup grated sharp cheese. Bake 350 degrees 40 to 60 minutes.
