Old-Fashioned Raisin Cookies

1 cup butter (no substitutes), softened
2 cups sugar
3 eggs
1 teaspoon vanillla extract
4 cups flour
1/2 teaspoon salt
1/2 cup sugar
1 1/2 teaspoon cornstarch
1/4 teaspoon cinnamon
1 cup chopped dates
1/2 cup raisins
1/2 cup water

In a saucepan, combine the first six ingredients. Cook and stir over medium heat until thickened and bubbly. Cool.

In a mixing bowl, cream butter and sugar, add eggs one at a time, beating well after each addition. Beat in vanilla, combine flour and salt, gradually add to the creamed mixture. Cover and refrigerate for 2-3 hours or until easy to handle. On a lightly floured surface, roll half of the dough to 1/8” thickness. Cut with a 2” round cookie cutter. Place 1” apart on ungreased baking sheet. Place 1 tsp. raisin filling in center of each cookie. Cover with dough which was rolled out and cut in 2” roll, cut a hole in top dough, place over the first cookie and raisin filling, pinch sides and bake 375 for 10-12 minutes.
