Rhubarb Bars

Rhubarb Bars

3 cups rhubarb (cut up)
1 1/2 cups sugar
2 Tbls. cornstarch
1/4 cup water
1 tsp. vanilla

Dissolve cornstarch in water, mix all together, cook until thick.

Mix together the following until crumbly.
1 1/2 cups oatmeal
1 1/2 cups flour
1 cup brown sugar
1/2 tsp. soda
1 cup shortening

Pat 3/4 of mixture into 9x13 inch pan. Pour in rhubarb mixture. Sprinkle remaining crumbs over top. Bake at 375 for 30-35 minutes.
