Wasn’t that a wonderful rain? I hope things will look better as the lawns were getting pretty brown. I guess we shouldn’t worry about the lawns, but think of the farmers and their struggle in this hot weather. I remember when I was a kid and the pastures got dried up, dad would then cut a bunch of corn and haul it down by the barn for the milk cows to eat and they thought they were in heaven, eating those green stalks of corn. dad would cut the stalks off as he said it was too dangerous for us kids using the big corn knife. Then we hauled the corn home in the old pick-up and scattered it in the cow yard for them to eat. Those were the Good Ole’ Days.

An old farmer rounded a curve on a country road and crashed into an oncoming car driven by a city-slicker salesman. As the men sat at the edge of the road waiting for the police, the old farmer turned to the salesman and said, “You look a little shook. I have a bottle of whiskey in my truck. Want a drink?” The salesman said that might help his nerves. He took a long pull on the bottle, handed it back and said, “Well, old-timer, are you going to have a drink, too?” “Yep,” the farmer said as he put the cap back on the bottle, “but I think I’ll have mine after the sheriff leaves.

Zucchini Marmalade
2 lbs. zucchini
1/2 cup lemon juice
1 tsp. grated lemon peel
1/2 tsp. grated orange peel
1 can (13-1/2 oz) crushed pineapple, drained
1 pkg. powdered fruit pectin
5 cups sugar
2 tbls. crystallized ginger, finely chopped
Peel zucchini and cut in thin slices, about 7 or 8 cups. In a large kettle, add zucchini, lemon and orange peel and crushed pineapple. Bring to a boil, lower heat and simmer uncovered until zucchini is tender, about 15 mins. Add powdered fruit pectin, place over high heat and bring to a boil. Stir in sugar and ginger, bring to a full rolling boil again, boil hard 1 min. stirring constantly. Remove from heat, skim and stir, cool slightly about 5 mins., laddle in hot, sterilized jars and seal. Makes about 5 half pints. (P.S. You can us 2 scant tsp. of dry ginger instead of the crystallized)
