Don’t the days and weeks go by fast. Thanksgiving has gone by and Christmas will be soon here. Right after Thanksgiving I start with my Christmas cards. I have always loved writing them out and putting a little note in them, especially those far away and tell them how things are going back here. I hope what happened September 11th won’t get us all down as we have to keep up the Christmas spirit, after all do we remember what really happened on Christmas?

Place an apple among stored potatoes. The apples give off enough ethylene gas to stop growth on the potatoes.

Add about 1/4 cup leftover dill pickles vinegar to chili next time you make it. This gives a good and different flavor.

Surprise Meringue
3 egg whites 1 tsp vanilla extract
1/8 tsp cream of tartar 1 cup (6 oz) miniature
3/4 cup sugar semisweet chocolate chips
1/8 tsp salt 1/4 cup chopped pecans or walnuts
In a mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar, salt and vanilla, beating until stiff peaks form and sugar is dissolved, about 5-8 minutes. Fold in the chocolate chips and nuts. Drop by rounded teaspoonfuls onto greased baking sheets. Bake 300º for 30 minutes or until lightly browned. Cool on baking sheets. Store in an airtight container.
Empty cake mix into bowl. Add applesauce, eggs, salt and extract. Beat three minutes until smooth and creamy. Combine fruit and nuts with the flour and mix well. Stir into batter. Bake in slow oven 275º about 2 hours.
