Have you been to Pedal Pushers Cafe lately? If not, you really should.

A few months ago, as I watched the graphics on their windows take shape, I was looking forward to seeing what else was changing on the inside of the restaurant.

On Friday, April 4, 2014, my wife and I felt a trip to Lanesboro for supper would be better than a home-cooked meal -- that night.

So, we entered Pedal Pushers Cafe to find the warm and inviting dining environment we had always loved even better than when we last visited.

Wow! Restaurant owners Scott and Angie Taylor could be interior designers. Along with a change in their color scheme, they added some new wall art like screen doors above each booth.

While their theme has always related to a 1950s or 1960s throwback, their new fresh look still maintains a small town charm. It’s new, but different in a good way.

So, we ordered our food, and enjoyed some conversation with our children while they colored the tabletop with crayons provided by the waitstaff.

When the food arrived, of course it was just a wonderful as the last time we were there. The Taylors have always maintained a goal of providing fresh and locally produced foods, connecting their guests with the best in the area.

I am usually a steak or burger (red meat) kind of guy, but my wife keeps pulling me the direction of chicken and fish. So, she encouraged me to try the southwestern tilapia.

And, as always, my wife has great taste.

If this was on a buffet menu, I would have gone back for seconds and probably thirds. I kept thinking that the black bean & corn salsa along with homemade guacamole would have been great on a lot of different types of foods. I mentioned to my wife that this topping would have been great on baked potatoes, too.

Well, needless to say, I was a member of the “Clean Plate Club.” I usually do live up to my lifetime membership eligibility requirements.

But, what I found most interesting during my visit to Pedal Pushers Cafe was that the crowd of guests came from near and far. I saw a Lourdes High School shirt walk through the door, and immediately thought of Rochester. I saw many locals, too, such as Amos Anderson and his grandson dining at the next booth. And, I couldn’t leave the restaurant without securing a crippling handshake from famous Amos.

Upon my evaluation of the cr .....
